If you want to start with basics for free, check out this Java EE basics course, using EAP 7. It'll give you free account to explore multiple RH products, and show you how to develop for JBoss EAP using Java EE.
Basic Java knowledge is required of course. If you're starting from no knowledge, I'd suggest some coursera courses on Java development.
There is also this free example of the EAP Administrator course provided by RH. Very good for some general overview of basic concepts utilized in EAP.
