Hi, EX200 used to be the purchase code for the exam when done in a classroom. EX200K is the code for individual exams, either done on an exam location ("Kiosk"), or at home using your computer and booting from a USB stick.
In terms of content and exam objectives, it's the same for both.

While I can't speak to the exams themselves, I can tell you that there are some very key differences between many parts of RHEL 8 and RHEL 9. In other words, RHEL 8 study guides may be very outdated with regard to RHEL 9 features.
