Why not, for example, 3 .10.0-1062.1.2.el7?

I'm trying to understand what version should be selected.
On a customer using satellite, is it provided the latest version from the "base repo" for example?
When I do a yum list kernel, I see the available one is 3.10.0-957.12.2.el7 (from repo rhel-7-server-rpms).
I don't understand why it's that version and not another one,

Hi ! :) Not sure if I understand correctly what you mean, currently the latest kernel for RHEL 7.6 is 3.10.0-957.35.2.el7 - the latest kernel for RHEL 7.7 is kernel-3.10.0-1062.1.2.el7 - the latest kernel for RHEL 8.0 is kernel-4.18.0-80.11.2.el8. You can find all of them by using the drop-down menu ...

Note that s kernel-3.10.0-1062..* series belongs to the RHEL 7.7 timeframe. Kernels released in the RHEL 7.6 timeframe and those beloging to RHEL 7.6 EUS channels are 3.10.0-957.* .
At any rate, the recommendation is to always use the latest version of RHEL (unless a third party product has a known incompatibility to newer version).
