I wanna take RHCSA & RHCE (124,134,254) exams but I am confused as I don't know exactly on which version of rhel7/7.1/7.2/7.3/7.4/7.5 they are going to base their exams...

They're all based on RHEL 7.0

RH124 and RH134 are the training that can lead you to a RHCSA

RH254 leads you to the RHCE

As noted by Tracy, both of the RHCSA (EX200) and RHCE (EX300) are based on RHEL 7.0,
