So the answer to my question is; don't follow the links to the exams/exam locations or you will end up on the "Exam Scheduler" page, where it only shows external providers. This is also confusingly where Red Hat's YouTube tutorial tells you to go but doesn't provide the URL in order for you to realise it's the wrong page.

Instead you have to go to the "Red Hat Training And Certification" page, where you can purchase courses and exams.

@Compo please elaborate a little more on your issue ? You mean after purchasing the exam you are not able to find any schedule / availability for EX200 in UK or US ?
You can also raise a support case if you need any help with exam scheduling or how to schedule an exam - remote and at test centre.

I'm struggling to find how to purchase and book an exam. If I search on Red Hat's website for exam locations in the UK it returns 1 company in London, who doesn't even have the exam listed. Are the exams booked through Red Hat or 3rd party companies ?

Ah ok ! Go to this link : https://www.redhat.com/en/services/training/ex200-red-hat-certified-system-administrator-rhcsa-exam , select your country and click on Get started
Complete the purchase , you will receive an email once it is completed. Post that you can use the scheduler app https://red.ht/2FPsner to schedule the exams.
If you are unable to find a testing centre , you can go for "remote exam" - for that please refer : https://www.redhat.com/en/resources/certification-remote-exams-FAQ
