Can I set the keyboard language? Can I take the exam with my own keyboard language?

as I know you can change your keyboard language after you booting to USB drive, for more details, see this video at 5.45 minutes

Yes you can change the keyboard settings, that is usually the first thing I do. The next would be the microphone volume and the network settings.
